Preparation

  • Soak wooden skewers in water for at least 30 minutes to prevent burning during cooking.
  • Cut the chicken breast into bite-sized pieces for even cooking.
  • Prepare the vegetables by slicing bell peppers and red onion into similarly sized pieces.
  • In a bowl, combine the chicken, pineapple, bell peppers, and onion.
  • Drizzle with olive oil, garlic, salt, and pepper, then toss to coat thoroughly.

Cooking

  • Preheat your grill to medium-high heat.
  • Thread the chicken, pineapple, bell peppers, and red onion onto the soaked skewers, alternating between ingredients.
  • Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is nicely charred and cooked through (internal temperature should reach 165°F or 75°C).

Serving

  • Once cooked, remove the kabobs from the grill and let them rest for a few minutes.
  • Serve the kabobs warm, garnished with fresh herbs if desired.

Notes

For added flavor, marinate the chicken in olive oil, garlic, salt, and your favorite herbs for a couple of hours before assembly. Use metal skewers for easier grilling and better heat retention. Cut all ingredients into similar sizes for even cooking. Don't overcrowd the skewers—leave some space between pieces for even grilling. Leftover kabobs can be used in salads or wraps.
