Preparation

  • Wash the russet potatoes under cold water, scrubbing away any dirt.
  • Pat the potatoes dry with a paper towel to avoid excess moisture.
  • Pierce each potato several times with a fork to allow steam to escape during baking.
  • Rub each potato with olive oil; this will help achieve that perfect crispy skin.
  • Season generously with salt and ground pepper for enhanced flavor.

Cooking

  • Arrange the potatoes directly on the oven rack or place them on a baking sheet.
  • Bake for 45-50 minutes, or until the skin is crisp and a fork easily pierces the flesh.
  • For an extra crispy finish, turn the temperature up to 450°F (232°C) for the last 10 minutes of baking.
  • Check for doneness: the potatoes should feel soft when squeezed, and the skin should be golden.

Serving

  • Remove the baked potatoes from the oven and let them cool for a few minutes.
  • Cut a slit in the top of each potato and gently squeeze the ends to fluff the inside.

Notes

For the best results, pierce the potatoes to prevent bursting. Store leftovers in an airtight container in the fridge for up to four days. Can freeze for up to three months, but the texture may change slightly upon thawing.
