Sauce ingredients

  • 1/3 cup smooth peanut butter Creates a rich, creamy texture
  • 3 tablespoons coconut aminos A soy sauce alternative that adds savory depth
  • 1 tablespoon sesame oil Provides a nutty flavor
  • 1 tablespoon cane sugar or honey Balances savory flavors
  • 1 tablespoon rice vinegar Adds acidity and brightness
  • 2 cloves minced garlic Imparts aromatic flavor
  • 1 teaspoon minced ginger Adds a warming spice note
  • 3 tablespoons warm water or broth Used to thin the sauce

Cooking oil

  • 2-3 tablespoons cooking oil Used for sautéing the aromatics

Instructions
 

Preparation

  • In a medium bowl, whisk together the peanut butter, coconut aminos, sesame oil, sugar or honey, rice vinegar, minced garlic, minced ginger, and warm water or broth until smooth. Taste and adjust seasonings as desired.
  • In a pan, warm 2 to 3 tablespoons of cooking oil over medium heat.
  • Add the minced garlic and ginger to the pan, and sauté for 30 to 40 seconds or until fragrant.
  • Incorporate the vegetables into the pan, cooking while stirring over medium to high heat until they reach your desired tenderness.
  • Pour the prepared peanut sauce over the vegetables. Stir immediately and continuously to combine.
  • Top with sesame seeds and sliced green onion as desired, then serve.

Notes

For extra flavor, consider adding soy sauce or chili flakes. Store leftovers in an airtight container for up to three days. Reheat gently to preserve texture.
