Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking dish with parchment paper or lightly grease it to prevent sticking.
  • In a large mixing bowl, cream together the softened unsalted butter, white sugar, and light brown sugar until light and fluffy, about 2-3 minutes.
  • Add the eggs and vanilla extract, mixing until fully incorporated.
  • In another bowl, whisk together flour, baking soda, and salt. Gradually blend this dry mixture into the wet ingredients, mixing just until combined.
  • Stir in the creamy peanut butter until smooth.
  • Fold in the chocolate chips until evenly distributed.

Cooking

  • In a separate bowl, combine the canola oil, cocoa powder, and remaining sugar until well blended.
  • Add the eggs and additional vanilla, mixing well.
  • Incorporate the all-purpose flour and salt into the cocoa mixture, stirring just until combined.
  • Spread the peanut butter cookie batter evenly in the lined baking dish.
  • Carefully layer the brownie mixture over the peanut butter layer, using a knife to swirl together gently for a marbled effect.
  • Bake in the preheated oven for 25-30 minutes. The brookies are done when a toothpick inserted into the center comes out mostly clean with a few moist crumbs.

Serving

  • Remove the brookies from the oven and let them cool in the dish for about 10 minutes.
