Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare a 9×13-inch baking pan by greasing it lightly or lining it with parchment paper.
  • Gather all the ingredients to ensure a smooth cooking experience.
  • In a mixing bowl, cream together the softened unsalted butter and both types of sugar until light and fluffy.
  • Add in the smooth peanut butter and mix until well combined.
  • Incorporate the egg, egg yolk, milk, and vanilla extract until the mixture is smooth.
  • Mix the baking soda, salt, and all-purpose flour in a separate bowl.
  • Gradually add the dry ingredients to the wet mixture until fully combined.
  • Fold in the peanut butter chips and set the mixture aside.

Cooking/Assembling

  • In another bowl, prepare the brownie mixture by creaming the unsalted butter, neutral oil, and granulated sugar until light.
  • Add the eggs and vanilla extract to the brownie mix, stirring until well combined.
  • Incorporate the cocoa powder, baking powder, and salt into the mixture, followed by the all-purpose flour.
  • Fold in chocolate chips until evenly distributed.
  • In the prepared baking pan, spread the brownie mixture evenly on the bottom.
  • Spoon the peanut butter mixture evenly on top of the brownie layer—swirl them slightly for a marbled effect.
  • Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted comes out clean.

Serving

  • Once baked, remove the pan from the oven and allow the brookies to cool in the pan for at least 15 minutes.
  • Cut into squares or rectangles for easy serving.
  • Serve warm, or at room temperature with a glass of milk or your favorite dairy-free alternative.
  • Store any leftovers in an airtight container at room temperature.

Notes

For best results, brown the butter for a richer taste. Use room temperature eggs for a fluffier texture. Substitute coconut flour for a gluten-free option. Sprinkle some sea salt on top before baking for added flavor.
