Preparation

  • Preheat your oven to 400°F (200°C) for a crispy finish.
  • Wash and dice the fresh peaches to your desired size.
  • In a mixing bowl, combine diced peaches, brown sugar, cinnamon, and lemon juice. Set aside.
  • Unroll the puff pastry and cut it into squares or circles, depending on your muffin tin.

Cooking/Assembly

  • Grease your muffin tin.
  • Layer the puff pastry squares into each muffin cup.
  • Fill each pastry cup with the peach mixture, pressing gently.
  • Fold the pastry over any exposed filling.
  • Bake in the preheated oven for 25-30 minutes until golden brown.

Serving
