Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and trim the ends off the zucchinis. Grate them using a box grater or food processor.
  • Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  • In a large mixing bowl, combine the prepared zucchini, eggs, garlic powder, onion powder, salt, and pepper.

Cooking

  • Add the breadcrumbs and grated Parmesan cheese to the zucchini mixture. Stir until well combined.
  • Grease a baking sheet with olive oil or cooking spray.
  • Form the mixture into bite-sized patties and place them evenly on the prepared baking sheet.
  • Bake in the preheated oven for 20-25 minutes, until golden brown and crispy.

Serving

  • Once baked, remove the zucchini bites from the oven and let them cool slightly.
  • Serve warm, garnished with additional Parmesan cheese or fresh herbs if desired.

Notes

Squeeze out as much moisture from the zucchini as possible. For a spicier kick, add red pepper flakes. If gluten-free, substitute regular breadcrumbs with almond flour. Store leftovers in an airtight container for up to three days, or freeze for up to two months.
