Preparation

  • Preheat your oven to 400°F (200°C).
  • Line a baking tray with parchment paper.
  • Pat the salmon fillets dry with paper towels.

Cooking

  • Place the salmon on the baking tray, skin-side down.
  • Drizzle olive oil over the fillets, ensuring they’re well-coated.
  • Spread minced garlic and Dijon mustard over the salmon.
  • Squeeze fresh lemon juice on top and sprinkle with salt and pepper.

  • Roast in the oven for 12–15 minutes, or until the salmon flakes easily with a fork.

Notes

Use fresh salmon and don't overcook. Meal prep by cooking a batch and storing in the fridge. Can be frozen for up to 3 months.
