Preparation

  • Preheat your oven to 225 degrees.
  • Halve the pumpkin and remove the fiber and seeds.
  • Cut the pumpkin into 8 slices.
  • Arrange the slices on a baking tray lined with baking paper.
  • Lightly crush the chili flakes, cumin seeds, and flaked sea salt in a mortar and pestle, then mix with the butter.

Cooking

  • Brush the pumpkin or squash with the spice mixture.
  • Sprinkle with pumpkin seeds.
  • Roast in the oven for about 30 minutes or until the pumpkin feels soft.

Serving

  • Serve hot or cold.

Notes

Experiment with roasting time; different pumpkins or butternut squashes may cook at slightly different rates. Serve with a drizzle of balsamic reduction or alongside a fresh salad for a refreshing contrast.
