Preparation

  • In a 12-ounce jar or container with a lid, combine the chia seeds, kosher salt, and orange zest.
  • Pour in the almond milk, orange juice, Greek yogurt, and maple syrup.
  • Stir until evenly combined and no chia seeds are stuck at the bottom.
  • Cover with a lid and refrigerate for at least 6 hours or overnight to allow the pudding to set.
  • Check consistency; the pudding should be thick and creamy. Stir if needed.
  • Keep it in the refrigerator until serving, for up to 4 days.
  • To enjoy, add an extra scoop of Greek yogurt on top or sprinkle with granola.
  • For extra protein, consider adding a scoop of vanilla protein powder to each jar.
