Preparation

  • Peel and slice the onions into thick rings.
  • In a bowl, combine buttermilk and egg; whisk together.
  • In another bowl, mix flour, cornstarch, salt, pepper, garlic powder, and smoked paprika.
  • Place the panko breadcrumbs in a separate dish.

Cooking

  • Dip each onion ring into the buttermilk mixture, letting the excess drip off.
  • Dredge in the flour mixture, ensuring a good coating.
  • Return the ring to the buttermilk, then toss it in panko breadcrumbs.
  • Heat oil in a deep pan to 350°F (175°C).

Serving

  • Fry rings in batches until golden brown, about 2-3 minutes.
  • Remove and drain on paper towels; sprinkle with salt.
  • Serve immediately while hot and crispy.

Notes

Make ahead by coating the onion rings and storing them in fridge until ready to fry. Store leftovers in an airtight container for up to 2 days. Can freeze uncooked rings for up to a month.
