Instructions
 

Preparation

  • Heat oil in a large skillet over medium heat.
  • Add the onion and sweet potato; cook until the onion softens, about 5 minutes.
  • Stir in the garlic and bell peppers; cook for 1 minute, stirring continuously.

Cooking

  • Add quinoa, diced tomatoes (fresh and canned), black beans, corn, and vegetable stock; stir to combine.
  • Increase heat and bring the mixture to a boil.
  • Reduce heat to medium-low, cover tightly, and let it simmer for 20 minutes, or until the quinoa absorbs most of the liquid.

Serving

  • Stir in lime juice and cilantro; season with salt and pepper to taste.
