For the Cheese Topping

Preparation

  • Gather all the ingredients on your kitchen counter.
  • Dice the onion and mince the garlic, setting them aside for easy access.
  • Open the cans of diced tomatoes and tomato sauce, ready to pour in.
  • Chop the fresh parsley to use as a garnish later.
  • Set your stove to medium heat and have a large pot ready.

Cooking

  • Heat the olive oil in a large pot over medium heat for about 1 minute.
  • Add the diced onion and cook until translucent, about 3-4 minutes.
  • Stir in the minced garlic and sauté for another minute until fragrant.
  • Increase heat to medium-high and add the ground beef, cooking until browned (about 5-7 minutes).
  • Pour in the diced tomatoes, tomato sauce, tomato paste, and chicken broth. Stir well.
  • Add Italian seasoning, salt, and black pepper to taste. Bring to a boil.
  • Once boiling, add the uncooked pasta, cover, and simmer for about 10-12 minutes or until pasta is tender.

Serving

  • Stir in the ricotta and mozzarella cheese until melted.
  • Adjust seasoning if needed and let it sit for a couple of minutes.
  • Ladle the soup into bowls, sprinkle with Parmesan cheese and fresh parsley on top.

Notes

For a creamier texture, mix in a bit more ricotta before serving. For added flavor, toast the garlic in the oil for a minute before adding the onions. Ensure to stir the pot occasionally to prevent pasta from sticking.
