Liquids and Seasonings

  • 1 tablespoon Soy Sauce Use gluten-free tamari if needed.
  • 1 tablespoon Sesame Oil Substitute with olive oil for a neutral taste.
  • 6 cups Low-Sodium Chicken Broth Vegetable broth works for vegetarian options.
  • 1 tablespoon Rice Vinegar Apple cider vinegar is a suitable substitute.

Vegetables

Preparation

  • In a large pot over medium heat, add the ground pork. Cook until browned, about 5–7 minutes, breaking it up with a spoon as it cooks.
  • Stir in the minced garlic, grated ginger, and diced onion. Cook for another 2–3 minutes until the onions are translucent and fragrant.
  • Pour in the low-sodium chicken broth and soy sauce, stirring to combine. Bring to a gentle simmer, allowing the flavors to meld together, approximately 5 minutes.
  • Add the shredded carrots and sliced cabbage. Stir well, then cover the pot and let it cook for an additional 5–7 minutes or until the cabbage has wilted and softened.
  • Create a small whirlpool in the soup and slowly pour in the beaten eggs, stirring gently to incorporate and create ribbons of egg in the broth. Cook for another 2 minutes.
  • Finally, add the rice vinegar, salt, pepper, and red pepper flakes or Sriracha to taste. Serve hot, garnished with chopped green onions.

Notes

Use fresh ingredients whenever possible for maximum flavor and nutrition. Make this a vegetarian dish by replacing ground pork with firm tofu and using vegetable broth. To save time, chop vegetables ahead of time or use pre-packaged coleslaw mix.
