Ingredients
  

For the Sauce

  • 1 can crushed tomatoes Forms the foundation of the sauce.
  • 2 tablespoons plant butter Adds a creamy richness.
  • 1 package gnocchi Soft, pillowy dumplings.
  • 1 tablespoon olive oil Provides healthy fat for sautéing.
  • 1 medium red onion Adds sweet and sharp flavor.
  • 2 cloves garlic Infuses the dish with flavor.
  • 2 tablespoons tomato paste Deepens the tomato flavor.
  • 1 teaspoon sea salt Enhances natural flavors.
  • 1/2 teaspoon black pepper Adds complexity to the dish.
  • 1 cup vegan milk Creates a creamy sauce.
  • 1 cup vegan cheese Melts into the sauce.
  • 1/4 cup basil Adds freshness.

Instructions
 

Preparation

  • Blend the crushed tomatoes for a smoother texture and set aside.
  • In a large pan over medium heat, melt the plant butter until hot.
  • Add the gnocchi directly to the pan and sauté until golden brown and crispy, about 5-7 minutes.
  • Remove the sautéed gnocchi from the pan and set aside.
  • In the same pan, add another tablespoon of plant butter or olive oil if necessary.
  • Add the diced red onion and sauté until translucent, about 5 minutes.
  • Stir in the minced garlic and cook for 1-2 minutes until fragrant.
  • Stir in the tomato paste and cook for another minute.
  • Pour in the blended tomatoes and stir well.
  • Season with sea salt and black pepper, and allow to cook down for 2-3 minutes.
  • Slowly pour in the vegan milk, stirring continuously.
  • Add in the vegan cheese and stir until melted.
  • Stir in the chopped fresh basil.
  • Return the sautéed gnocchi to the pan and gently toss to coat.
  • Cook for an additional 2-3 minutes until heated through.
  • Taste and adjust seasoning as needed.
  • Serve hot, garnished with additional fresh basil if desired.

Notes

For a thicker sauce, use less vegan milk; for a creamier sauce, use more. Consider adding sautéed spinach or mushrooms for extra nutrition.
