Instructions
 

Preparation

  • Cut the boneless chicken breasts into bite-sized pieces.
  • Dice the onion and bell pepper and mince the garlic.
  • Ensure the long-grain rice is rinsed well to remove excess starch.

Cooking

  • In a large pot, over medium heat, cook the diced chicken until golden and cooked through.
  • Stir in the onion, bell pepper, and garlic. Sauté until the veggies soften.
  • Add the rinsed rice, black beans, corn, chicken broth, salsa, and spices. Stir well.
  • Increase the heat, and let it bubble gently.
  • Once boiling, reduce the heat, cover, and simmer for 15–20 minutes or until the rice is fluffy and cooked.

Serving

  • Remove from heat and stir in cream cheese until creamy, then fold in shredded cheddar.
  • Season with salt and pepper as needed.
