Instructions
 

Preparation

  • Heat a large stock pot or very large skillet over medium heat.
  • Add oil, and sauté zucchini, onion, and garlic for 3-4 minutes.

Cooking

  • Stir in broth, salsa verde, tomatoes, chilies, and spices.
  • Bring to a boil, then reduce and simmer on low for 5 minutes.
  • Add spinach, corn, meat, and beans; simmer for 15-20 minutes.
  • Season with salt and pepper to taste.

Notes

To make it spicier, add diced jalapeño or red pepper flakes. Adjust ingredients to suit your preferences or dietary needs.
