Preparation

  • In a large bowl, combine the bread flour, instant yeast, coarse salt, dried oregano, and garlic powder.
  • Incorporate the chopped olives and lukewarm water into the dry mixture.
  • Use a spatula or your hands to mix until a sticky dough forms.
  • Tightly cover the bowl with plastic wrap and let it rise in a warm place for about 120 minutes or until it doubles in size.

Baking

  • Turn the dough onto a lightly floured surface and gently form it into a round loaf.
  • Place the shaped loaf on a lightly greased baking sheet, cover, and let it rest for 45 minutes.
  • Preheat your oven to 425°F (220°C).
  • After resting, use a sharp knife to create a shallow score on the top of the loaf.
  • Put the baking sheet in the oven and bake for 35-40 minutes or until the crust turns a deep golden brown.
  • Remove the bread from the oven and transfer it to a wire rack. Let it cool for at least 15 minutes before slicing.

Notes

For the best results, use high-quality olives and ensure they are well-drained before chopping. Create steam in the oven for a crunchier crust. You can also rise the dough overnight in the refrigerator for deeper flavor.
