  • In a bowl, combine 1 cup rolled oats and 1 cup milk and let it sit for 10-15 minutes until the oats soften.
  • In a separate bowl, whisk together 1 large egg, 2 tablespoons honey or syrup, 1 teaspoon baking powder, 1/2 teaspoon vanilla extract, and a pinch of salt.
  • Gently combine the wet and dry ingredients, mixing until just combined.

Cooking

  • Heat 1 tablespoon coconut oil or butter in a skillet over medium heat.
  • Pour the batter onto the skillet to form pancakes, cooking for 2-3 minutes on each side until golden brown.
  • Serve warm with your favorite toppings.

Notes

Common mistakes include overmixing the batter and not letting it sit. Keep the skillet at medium heat for perfect cooking.
