Dry Ingredients

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper or grease it well.
  • In a large mixing bowl, whisk together the eggs, mashed banana, melted coconut oil, maple syrup, coconut sugar, and vanilla extract until smooth.
  • Add the oat flour, baking soda, baking powder, salt, and cinnamon directly to the wet ingredients. Stir with a rubber spatula until no streaks of flour remain, then fold in chocolate chips.
  • Let the batter rest for 5 minutes.

Cooking

  • Transfer the batter to the prepared loaf pan and smooth the top. Sprinkle with extra mini chocolate chips if desired.
  • Bake for 50–60 minutes until the top has a nice crack in the middle and a toothpick inserted into the center comes out clean.

Serving

  • Let the loaf cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Serve warm with almond butter, Greek yogurt, or a sprinkle of cinnamon. This banana bread can also be frozen for up to three months.
