Preparation

  • Soak the walnuts overnight in cold water with a pinch of sea salt or in warm water for 2 hours.
  • Drain and rinse the walnuts thoroughly once soaked.
  • Pulse the soaked walnuts and pitted Medjool dates in a food processor until they become gooey.
  • Use a butter knife to scrape the processor's sides to aid blending.
  • Incorporate the cacao powder and mint extract, then pulse until smooth.
  • Optionally, chill the cookie dough in the fridge for about 30 minutes.
  • Roll the mixture into 12 to 14 balls using a cookie scoop or your hands.
  • Press down on each ball to form a thin disk shape.
  • Place the disks in the freezer for at least 1 hour to set.

Coating and Setting

  • In a microwave-safe bowl, melt the chocolate chips with coconut oil for 30 to 45 seconds, stirring halfway through.
  • Coat each cookie thoroughly in the melted chocolate mixture.
  • Place the chocolate-coated cookies on parchment paper to cool.
  • Optionally, sprinkle a little sea salt on top for extra flavor.
  • Return the cookies to the freezer for at least half an hour to harden.

Notes
