Instructions
 

Phase 1 – Prep

  • Gather all ingredients and your equipment—mixing bowl, spatula, and an 8-inch springform pan.
  • In a large mixing bowl, combine graham cracker crumbs and melted butter. Mix until evenly coated.
  • Press the crumb mixture firmly into the bottom of the springform pan to form an even crust. Place in the refrigerator to set for at least 15 minutes.

Phase 2 – Cook/Assemble

  • In another bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add the powdered sugar and vanilla extract. Beat until well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
  • Add the pistachio pudding mix, folding until the mixture is a beautiful green color and homogenous.
  • Spread the cheesecake filling over the prepared crust, smoothing the top with a spatula.
  • Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours or overnight until set.

Phase 3 – Serve

  • Once set, carefully remove the cheesecake from the springform pan. Run a knife around the edge if needed.
  • Garnish with chopped pistachios for added crunch and visual appeal.

Notes
