Ingredients
  

For the crust

  • 2 cups Graham Crackers, crushed Provides crunch and structure.

For the caramel layer

  • 1 cup Medjool dates, pitted Provides natural sweetness.
  • 1/4 cup Melted coconut oil Adds moisture and aids in blending.
  • 1/2 cup Almond butter Introduces creaminess and nutty flavor.
  • 1 tsp Vanilla extract Enhances the overall flavor.
  • 1/4 tsp Sea salt Balances sweetness.

For the chocolate topping

  • 1 cup Chocolate chips Creates a rich chocolate layer.
  • 1 tbsp Coconut oil Used to melt the chocolate.

Preparation

  • Layer crushed graham crackers in an 8×8 parchment paper lined baking dish to make the crust.
  • Blend pitted medjool dates in a food processor until a paste consistency is reached. Add melted coconut oil, almond butter, vanilla, and sea salt. Blend until well combined. Press the mixture onto the graham cracker layer.
  • Melt chocolate chips with coconut oil in a mixing bowl and whisk until smooth. Pour over the caramel layer and spread evenly.
  • Optional: Sprinkle a little sea salt on top for added flavor.
  • Freeze for at least an hour to set, then cut into bars or squares and enjoy.

Notes

For extra flavor, toast the graham cracker crumbs before pressing into the dish. Use dark chocolate for a richer taste and consider drizzling white chocolate on top for decoration.
