Instructions
 

Preparation

  • Gather all your ingredients on the counter.
  • Get a medium saucepan and a mixing bowl ready.
  • Measure out your peanut butter, honey, and butter (or coconut oil).
  • If you choose, chop any nuts or dried fruits for your mix-ins.

Cooking

  • In your saucepan, combine peanut butter, honey, butter (or coconut oil), salt, cocoa powder, and vanilla extract.
  • Heat over medium-low, stirring until everything is melted and well blended—about 3-5 minutes.
  • Remove from heat and stir in the oats, mini chocolate chips, and any other optional mix-ins.
  • Mix until everything is evenly coated.

Serving

  • Using a spoon, scoop out portions onto parchment-lined baking sheets.
  • Shape each scoop into a cookie. They don’t need to be perfect, just delicious!
  • Refrigerate for at least 30 minutes until they firm up.
  • Serve chilled or at room temperature.

Notes

Choose creamy peanut butter, experiment with different mix-ins, and store cookies in an airtight container in the fridge. Adjust sweetness by reducing honey if preferred.
