Preparation

  • Combine the dry ingredients: Add the pecans, dates, shredded carrots, cinnamon, nutmeg, sea salt, and half of the shredded coconut flakes to your food processor.
  • Pulse the mixture until fully incorporated and it begins to turn into a dough (about 1 minute).
  • Scrape down the sides of the food processor to ensure everything is well mixed if necessary.
  • Using cling-film, shape the mixture into round balls.
  • Alternatively, use damp hands to roll the balls if you prefer not to use cling-film.
  • Roll the formed balls in the remaining shredded coconut flakes for added texture.
  • Place the energy bites in the fridge for at least an hour to set properly before enjoying.

Notes

For best texture, chop the dates and pecans into small pieces before processing. If the mixture is too crumbly, add a teaspoon of warm water. Be mindful of portion size when rolling; aim for consistent sizes for even enjoyment.
