Preparation

  • Gather all the ingredients and cooking tools.
  • Chop the onion and garlic finely.
  • Slice the mushrooms and rinse the spinach if necessary.

Cooking

  • In a large pot, heat a drizzle of olive oil over medium heat.
  • Add the chopped onion and garlic, cooking until softened and fragrant, about 3-5 minutes.
  • Stir in the sliced mushrooms and cook until they release their moisture and brown slightly, around 5-7 minutes.
  • Add the orzo to the pot and toast it with the vegetables for about 1-2 minutes.
  • Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer and cover, cooking until the orzo is tender, about 10 minutes.
  • Fold in the fresh spinach and let it wilt for an additional 1-2 minutes.

Serving

  • Remove the pot from heat and stir in the Parmesan cheese.

  • Serve warm, garnished with extra Parmesan if desired.
