Preparation

  • Clean the mushrooms with a damp cloth and slice them thinly.
  • Dice the onion and mince the garlic.
  • Chop the parsley for garnish.

Cooking

  • In a large pan, heat olive oil over medium heat.
  • Add diced onions and sauté until translucent, about 3-5 minutes.
  • Stir in minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.
  • Add rice and stir to coat it with the mixture, cooking for an additional 2 minutes.
  • Pour in vegetable broth and bring to a boil.
  • Once boiling, reduce heat to low, cover, and simmer until rice is cooked, about 18-20 minutes.

Serving

  • Fluff the rice gently with a fork to separate the grains.
  • Stir in the chopped parsley for a fresh finish.
  • Serve warm as a flavorful side dish.

Notes
