Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  • Gather your ingredients to ensure you have everything you need.
  • Grate the carrots and apple finely, making sure to remove excess moisture with a paper towel if necessary.

Mixing

  • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt until well combined.
  • In another bowl, mix the oil, eggs, and vanilla until smooth.
  • Combine the wet ingredients with the dry ingredients, stirring gently until just mixed. Don’t overmix!
  • Fold in the grated carrots, apple, coconut, and nuts or dried fruit until evenly distributed.

Baking

  • Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  • Bake for 20-25 minutes until the tops are golden and a toothpick comes out clean.
  • Allow them to cool in the tin for a few minutes before transferring to a wire rack.

Notes

Use fresh ingredients and don't overmix to keep your muffins tender. Experiment with different nuts or add-ins like dried fruits.
