Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x5-inch loaf pan well with non-stick spray or butter.
  • In a mixing bowl, blend the flour, baking powder, and salt. Set aside.
  • In another bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Cooking and Assembling

  • Gently fold in the flour mixture alternately with the sour cream, beginning and ending with the flour mixture.
  • Stir in the key lime juice and zest until just combined.
  • Pour the batter into the prepared loaf pan, smoothing the top for an even bake.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
