Base and Sauce

  • 4 pieces Thomas Light Multi Grain English Muffins Provides a hearty base with added fiber.
  • 1 cup Pizza sauce A rich, flavorful spread that ties all the toppings together.

Cheese

  • 1 cup Shredded mozzarella cheese Melts beautifully, adding creaminess and stretch.
  • 4 tablespoons Finely grated parmesan cheese Adds sharpness and depth of flavor.

Toppings

  • 40 pieces Mini pepperoni Provides a savory and satisfying meaty element.
  • 1 bunch Fresh basil leaves Optional fresh herb for garnish.

Instructions
 

Preparation

  • Preheat the oven to 400°F.
  • Line a baking sheet with a Silpat or spray it lightly with cooking spray.
  • Place the halved English muffins on the prepared baking sheet.

Cooking

  • Evenly distribute pizza sauce over each muffin half, using approximately two tablespoons per half.
  • Sprinkle shredded mozzarella cheese over the sauce, using around a quarter cup for each muffin half.
  • Add a tablespoon of finely grated parmesan cheese onto each muffin half.
  • Place about ten mini pepperoni slices on each half.
  • Bake in the oven for about 10 to 12 minutes until the cheese is melted and bubbly.

Serving

  • If desired, sprinkle minced fresh basil over the pizzas after removing them from the oven.
  • Serve the mini pepperoni pizzas warm for the best flavor.

Notes

For a crunchier crust, lightly toast the English muffins before adding sauce and toppings. Experiment with different toppings according to preference.
