Preparation

  • Preheat your oven to 375°F (190°C).
  • Gather your ingredients and prepare your workspace.
  • Season the chicken breasts with chili powder, garlic powder, onion powder, crushed red pepper flakes, oregano, paprika, cumin, salt, and pepper.
  • Coat a baking dish with cooking spray or oil.

Cooking

  • Place the seasoned chicken breasts in the baking dish, spaced evenly.
  • Bake in the preheated oven for 25 to 30 minutes, or until fully cooked (internal temperature of 165°F or 74°C).
  • While the chicken is baking, melt butter in a saucepan over medium heat to prepare the roux.
  • Whisk in flour once melted, stirring for 1-2 minutes to create a paste.
  • Gradually add milk, whisking continuously until smooth and thickened (about 5-7 minutes).
  • Stir in remaining salt, cayenne pepper, and paprika.
  • Remove from heat and stir in shredded cheddar cheese until melted and smooth.

Serving

  • Once the chicken is baked, let it rest for a few minutes.
  • Slice the chicken into strips and serve on plates.

Notes

For an extra creamy sauce, use half-and-half instead of milk. Mix in fresh herbs for a fresh taste explosion. Store leftover cheese sauce separately to avoid sogginess.
