Preparation

  • Add minced garlic and ground beef to the skillet, cooking until the beef is browned.
  • Fold in the diced red and yellow pepper, cooking for an additional minute.

Cooking

  • Mix in the tomato paste, taco seasoning, salt, and pepper, allowing to cook for 1 minute.
  • Stir in the rice, broth, salsa, black beans, and corn until well combined.
  • Let the mixture come to a simmer, then cover and reduce heat.
  • Allow the dish to cook gently for around 15 minutes, or until the rice is tender and has absorbed the liquids.
  • Check for moisture; add more broth if the mixture seems too dry.
  • If desired, sprinkle shredded cheese over the top and cover for 2 more minutes to melt.

Serving
