Preparation

  • Gather all ingredients and tools, ensuring you have a large skillet or wok ready.
  • Dice the red bell pepper and slice the cherry tomatoes in half.
  • Rinse the baby spinach and chop the green onions, separating the white and green parts.
  • Minch the garlic cloves for a fragrant base.
  • Measure out your seasonings, including oregano, salt, and pepper.

Cooking

  • Heat the olive oil in your skillet over medium-high heat (around 375°F or 190°C).
  • Add minced garlic and the white parts of the green onion; sauté for 1-2 minutes until fragrant.
  • Stir in the ground beef, seasoning it with oregano, salt, and pepper as it cooks. Cook for about 5-7 minutes until it's browned and cooked through.
  • Add the diced bell pepper and cherry tomatoes, cooking for an additional 3-4 minutes until the vegetables soften.
  • Finally, toss in the baby spinach and cook until wilted, about 2 minutes more.

Serving

  • Remove the skillet from heat; drizzle with additional olive oil if desired.
  • Sprinkle with crumbled feta cheese, if using.
  • Garnish with the fresh green parts of the green onion.
  • Serve hot over a bed of cauliflower rice, zoodles, or on its own.

Notes

This dish is adaptable; feel free to swap ground beef for turkey, or add extra spices for heat. Leftovers can be stored for up to 3 days in the fridge.
