Preparation

  • Gather all ingredients and equipment to ensure a smooth cooking experience.
  • Slice the chicken breast into strips and season with salt, pepper, paprika, and oregano.
  • Chop the bell pepper, zucchini, and red onion into bite-sized pieces. Halve the cherry tomatoes.
  • Mince the garlic cloves, preparing them for sautéing.
  • Heat your skillet over medium heat for 2-3 minutes.

Cooking

  • Add 2 tablespoons of olive oil to the skillet, swirling it around to coat the bottom.
  • Once hot, add the seasoned chicken strips and cook for about 5 minutes, stirring occasionally until golden brown.
  • Add garlic and red onion into the skillet and cook for another 2 minutes.
  • Stir in bell pepper and zucchini, cooking for 3-4 minutes until slightly softened.
  • Finally, add cherry tomatoes and cook for an additional 1-2 minutes until they start to soften.

Serving

  • Remove from heat and transfer stir-fry to a serving platter or individual bowls.
