Preparation

  • Preheat your oven to 400°F (200°C).
  • Gather all your ingredients and make sure your chicken breasts are thawed and patted dry.
  • In a large baking dish, place your chicken breasts side by side.
  • Season the chicken with salt, pepper, and dried oregano evenly over the top.
  • Drizzle olive oil over the chicken to ensure a succulent bake.

Cooking

  • Scatter the cherry tomatoes around the chicken, ensuring they are evenly distributed.
  • Add Kalamata olives on top and around the chicken.
  • Crumble the feta cheese generously over the entire dish.
  • Bake in the preheated oven for 30-35 minutes until the chicken reaches 165°F (74°C) and is golden on the edges.
  • Keep an eye on the feta cheese. It should be melty with a slight golden crust.

Serving

  • Once cooked, remove the dish from the oven and let it rest for 5 minutes.
  • Garnish with freshly chopped parsley for a pop of color and freshness.
  • Serve the Mediterranean Chicken Feta Bake warm, paired with your favorite greens or a wholesome grain.

Notes

Store leftovers in airtight containers in the fridge for up to 4 days. Can freeze leftovers for up to 3 months. Reheat in a preheated oven at 350°F (175°C) for 15-20 minutes.
