  • 2 lbs Ground beef Lean ground beef is recommended.
  • 1 cup Crushed crackers Adds texture to the meat mixture.

  • 1 large Egg Binds the mixture together.
  • 1/2 cup Milk Adds moisture and richness.
  • 1/3 cup Ketchup Contributes sweetness and tanginess.
  • 1 tablespoon Worcestershire sauce Enhances umami flavor.
  • 1 teaspoon Seasoning salt blend Provides flavorful seasoning.
  • 4 cups Mashed potatoes Creamy base that tops the meatloaf layer.
  • 2 cups Shredded cheddar cheese For the cheesy layer.
  • 1 cup Crushed crackers (for topping) Combined with melted butter for topping.
  • 1/2 cup Melted butter Binds the topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine ground beef, cracker crumbs, onion, garlic powder, egg, milk, ketchup, Worcestershire sauce, and seasoning salt blend until well incorporated.
  • Press the meat mixture evenly into a 13'x9' baking dish.
  • Bake the meatloaf layer for 25-30 minutes, or until nearly cooked through.
  • While the meatloaf is baking, prepare the mashed potatoes and stir in cheddar cheese if using store-bought.
  • Once the meatloaf layer is cooked, pour off any excess grease.
  • Spread the prepared mashed potatoes evenly over the meatloaf.
  • Top with shredded cheddar cheese and a mixture of crushed crackers and melted butter.
  • Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly and the topping is golden brown.
  • Allow to cool for 5 minutes before slicing and serving.

Notes

For best results, use lean ground beef, allow ingredients to come to room temperature, and don’t over-mix to prevent a dense texture.
