Main Protein

Instructions
 

Preparation

  • In a large stockpot, boil salted water and cook the rigatoni according to package directions until al dente. Drain and set aside, reserving 3/4 cup pasta water.
  • In a large skillet, heat the oil from the jar of sundried tomatoes over medium heat.
  • Cook garlic and flour in the oil for 1-2 minutes while stirring until fragrant.
  • Gradually whisk in the chicken broth, then add the heavy cream and tomato paste, mixing well.

Cooking

  • Add the sundried tomatoes, shrimp, Italian seasoning, salt, pepper, and optional red pepper flakes. Bring to a simmer.
  • Reduce heat and cook until shrimp are fully cooked, about 4 minutes.
  • Once shrimp are done, add the Parmesan cheese, spinach, and cooked pasta. Toss to combine and adjust seasoning as needed.
  • If the sauce is too thick, gradually add reserved pasta water until the desired consistency is achieved.

Serving

  • Garnish with basil, parsley, or additional Parmesan, and serve immediately.

Notes

To achieve a perfect sauce, do not overcook the shrimp; they should be pink and opaque. Use fresh herbs for enhanced flavors, and feel free to adjust the amount of heavy cream for creaminess.
