Preparation

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper for easy cleanup.
  • Rinse, peel, and cut the sweet potatoes into small cubes, about 3/4-inch pieces.
  • In a small bowl, combine maple syrup, brown sugar, cinnamon, and olive oil until well blended.
  • Spread the diced sweet potatoes in a single layer on the prepared baking sheet.
  • Pour the maple syrup mixture over the sweet potatoes.
  • Add a pinch of salt and toss the sweet potatoes until they are evenly coated.

Cooking

  • Roast in the oven for 30 to 40 minutes or until the sweet potatoes are tender and the edges are lightly browned, turning them with a spatula halfway through.
  • Remove from the oven and add more salt to taste, if desired.
  • Serve warm and enjoy!

Notes

For a richer flavor, let them roast a bit longer until caramelized. Avoid overcrowding on the baking sheet to prevent steaming. Can prepare sweet potatoes ahead of time and store them in the refrigerator.
