Instructions
 

Preparation

  • Rinse the glutinous rice thoroughly under cold water until the water runs clear.
  • Soak the rinsed rice in water for at least 4 hours or overnight.
  • Prepare the mango by peeling and slicing it, then set it aside.
  • In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium until the sugar dissolves.

Cooking

  • Drain the soaked rice and steam it for about 25-30 minutes until tender and sticky.
  • Transfer the cooked rice into a mixing bowl and pour half of the coconut milk mixture over it. Mix until evenly coated.
  • Let the rice sit for about 10 minutes to absorb the flavors.

Assembly and Serving

  • Layer the sweetened rice in a serving bowl, followed by generous spoonfuls of ube halaya on top.
  • Top with fresh mango slices and drizzle the remaining coconut milk mixture over the top. Sprinkle sesame seeds for garnish.
  • Serve warm and enjoy immediately.

Notes

For deeper flavor, toast the glutinous rice before rinsing. Use full-fat coconut milk for a richer texture. Adjust sugar based on ube sweetness. Store leftovers in an airtight container for up to 3 days.
