  • 2 large ripe mangoes Choose soft to the touch but firm in shape.
  • 1 medium red onion Dice into small, uniform pieces.

  • 2 tablespoons lime juice Freshly squeezed for best taste.

Preparation

  • Prepare the mango. Locate the stem and stand the mango on the cutting board, stem up.
  • Slice the mango. Cut along the seed about a quarter inch to the right and left of the stem.
  • Dice the mango flesh. Lay both mango halves cut side up, slice the flesh lengthwise and widthwise, then scoop out the diced flesh with a spoon.
  • Chop the onions. Dice the red onion into small, uniform pieces for consistency in flavor and texture.
  • Prepare the jalapeños. Mince the jalapeños, adjusting as per your spice tolerance by keeping the seeds or removing them.

Mixing

  • In a mixing bowl, combine the diced mango, minced jalapeños, diced red onion, and minced cilantro.
  • Squeeze in the fresh lime juice to brighten the flavors of the salsa.
  • Drizzle in honey, adding a sweet contrast to the acidity and spiciness.
  • Sprinkle cayenne pepper into the mix for an extra layer of heat.
  • Combine all ingredients gently, being careful not to smash the mango for a beautiful presentation.

Notes

For best flavor, chill for 30 minutes before serving. Use ripe mangoes and don’t skip the cilantro for optimal taste. Consider adding a splash of orange juice for an extra twist.
