Preparation

  • Wash all your fresh ingredients thoroughly, paying attention to the cucumbers and cilantro.
  • Peel and pit the ripe mangos, then dice them into bite-sized pieces.
  • Finely chop the red onion, avoiding large pieces.
  • Remove seeds from the jalapeño and finely dice it, adjusting quantity for desired heat level.
  • Slice and dice the cucumber into uniform pieces.

Cook/Assemble

  • In a large mixing bowl, combine diced mango, chopped red onion, and diced cucumber.
  • Add the finely diced jalapeño and chopped cilantro to the bowl.
  • Juice the lime over the ingredients and sprinkle with kosher salt.
  • Gently toss all ingredients until well combined.
  • Let the salsa rest for about 10 minutes to allow flavors to meld.

Serve

  • Serve immediately as a dip with tortilla chips or as a topping for grilled chicken or fish.
