Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a baking dish or line it with parchment paper.
  • In a bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt.
  • Incorporate the softened butter until the mixture resembles coarse crumbs. Set aside 1 cup of this mixture for topping.
  • Mix in the diced mangos and lime juice with the remaining mixture until just combined.

Cooking

  • Spread the mango mixture evenly into your prepared baking dish.
  • Sprinkle the reserved crumb mixture over the mango filling.
  • Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  • Remove from the oven and allow to cool in the pan for about 10 minutes.

Serving

  • Once cooled, carefully cut the bars into squares.
  • Serve warm or let cool completely for firmer texture.

Notes

Use ripe mangos for maximum sweetness. Store bars in an airtight container for freshness. They can also be frozen for up to 2 months.
