Ingredients

Main Ingredients

  • 2 cans (15 oz each) canned lentils, drained The base ingredient packed with protein.
  • 1 large egg Acts as a binder to hold the patties together.
  • ½ cup parmesan, grated Adds a rich, savory flavor.
  • 4 tablespoons all-purpose flour or chickpea flour Helps with the texture; substitute for gluten-free needs.
  • ¼ cup parsley, chopped For freshness and flavor.
  • 1 medium onion, chopped Brings sweetness and depth.
  • 3 cloves garlic, grated Adds aroma and taste.
  • 1 teaspoon ground cumin Offers a warm, earthy flavor.
  • 1 teaspoon ground coriander Enhances the dish’s complexity.
  • 1 teaspoon salt Essential for taste.
  • ⅛ teaspoon black pepper For a touch of spice.
  • 4 wedges lemon For brighter flavor when serving.

Instructions

Preparation

  • In a food processor, combine the drained lentils, egg, grated parmesan, flour, chopped parsley, chopped onion, grated garlic, ground cumin, ground coriander, salt, and black pepper. Pulse a few times until coarsely combined—aim for a chunky texture that isn’t overblended.
  • Using your hands or a cookie cutter, form the mixture into 12 patties, ensuring they’re evenly shaped. Arrange them on a baking tray lined with parchment paper for easy cleanup.

Cooking

  • Pan-Fried: Heat 2 tablespoons of olive oil in a nonstick skillet over medium heat. Carefully place the patties in the skillet and fry for about 5 minutes on each side, turning once, until they are golden brown.
  • Oven-Baked: Brush the patties with olive oil and bake in a preheated oven set to 400°F (200°C) for about 20 minutes or until golden brown.
  • Air-Fried: Coat your air fryer basket with olive oil to prevent sticking. Arrange the patties inside, brush with more oil, and air fry at 400°F (200°C) for around 10 minutes, achieving a crispier texture.

Serving

  • Serve the lentil patties with wedges of lemon to squeeze on top. They pair deliciously with tzatziki or marinara sauce, and go well beside saffron rice, couscous, or in pita bread.

Notes

Lentil patties can easily be made vegan by substituting the egg with a flax egg or aquafaba. Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months.
