Lentil Curry Base

  • 1 cup brown or green lentils Rinsed to ensure optimal cooking and flavor absorption.
  • 1 tablespoon olive oil Adds richness to the curry and helps the spices bloom.
  • 2 tablespoons tomato paste Provides depth and sweetness, enhancing the overall flavor.
  • 3 cloves garlic Adds pungent and aromatic notes that elevate the dish.
  • 1 tablespoon fresh minced ginger Contributes a warm and zesty flavor profile.
  • 1 teaspoon onion powder Imparts subtle sweetness and depth of flavor.
  • 1 tablespoon curry powder Essential for the signature taste of a flavorful curry.
  • 1 teaspoon garam masala Offers a warm and fragrant finish that rounds out the spices.
  • 1 teaspoon coconut sugar Balances the flavors with a hint of sweetness.
  • 1 teaspoon salt Enhances the overall taste of the dish.
  • 4 cups vegetable broth Provides a robust base, infusing the curry with rich flavors.
  • 1 cup coconut milk Adds creaminess and a luscious texture to the curry.
  • 1/4 cup fresh cilantro For serving, adds freshness and vibrant color.
  • 2 cups rice A comforting base that complements the curry’s bold flavors.
  • 4 cups water Necessary for cooking the rice to fluffy perfection.

Instructions
 

Preparation

  • Power on the steamer.
  • Fill the stew pot’s water tank with water, stopping just below the maximum line.
  • In one stew pot, place rinsed rice and water, then cover with the lid.
  • In the second stew pot, add rinsed lentils, olive oil, tomato paste, garlic, ginger, onion powder, curry powder, garam masala, coconut sugar, salt, and vegetable broth. Stir well and cover with the lid.
  • Insert the stew pots into the steamer stand and cover with the two-tiered lid.
  • Turn on steam mode for 55 minutes.
  • After 45 minutes, add your chosen vegetables to the ceramic tray and steam for the remaining 10 minutes.
  • Remove the lid and stir in coconut milk to the lentil curry mixture.
  • Dish out the rice, lentil curry, and steamed vegetables, garnished with fresh cilantro.

Notes

For a Regular Slow Cooker: Triple the lentil curry recipe, add all ingredients to the slow cooker, and cook on high for 3-4 hours or until tender. Stir in coconut milk, serve over rice, and garnish with fresh cilantro. Store leftovers in a sealed container in the refrigerator for up to 3 days.
