Preparation

  • Gather your ingredients on a clean countertop.
  • Dice the onion and leeks, slice the carrots, chop the celery, and mince the garlic.
  • Cut the chicken breasts into 1/2-inch pieces.
  • Bring a pot of chicken stock and water to a simmer on medium heat.
  • Measure and set aside lemon juice and tarragon.

Cooking

  • Heat canola oil in a large pot over medium-high heat. Add the diced onion, leeks, and garlic, sautéing for 3-5 minutes.
  • Add sliced carrots and celery, stirring for another 5 minutes.
  • Stir in the flour, salt, and pepper, cooking for 1-2 minutes.
  • Introduce the chicken to the pot, stirring until it turns golden brown.
  • Pour in the warmed chicken stock and water, followed by the orzo pasta. Bring to a gentle boil.

Serving

  • Once the stew reaches a boil, reduce to low heat and let it simmer for about 15-20 minutes.
  • Check the pasta; it should be tender but not mushy. Adjust seasoning with salt and pepper as needed.
  • Stir in fresh lemon juice and tarragon right before serving. Serve warm in bowls.

Notes

For richer flavor, let the stew simmer longer on low heat. Swap canola oil for olive oil for a different profile. Store leftovers in airtight containers.
