Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  • In another bowl, beat softened butter and granulated sugar until light and fluffy.
  • Mix in the egg and vanilla extract until fully incorporated.
  • Blend the lemon zest and fresh lemon juice into the mixture.
  • Gradually mix in the buttermilk until the batter is smooth.
  • Slowly add the dry mixture to the wet ingredients, mixing until just combined.
  • Line a baking sheet with parchment paper.
  • Drop spoonfuls of batter onto the baking sheet, spacing them evenly apart.
  • Bake for about 10 to 12 minutes, or until lightly golden and set.
  • Allow the cookies to cool before transferring them to a wire rack.

Filling Preparation

  • In a mixing bowl, beat softened cream cheese and butter together until creamy.
  • Gradually mix in confectioners' sugar, vanilla extract, lemon zest, and lemon juice until smooth.

Assembly

  • Once cookies are cool, spread or pipe the filling onto one cookie and sandwich with another.

Notes

Ensure butter is at room temperature for the best results. Avoid overmixing the batter.
