Preparation

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper to prevent sticking.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy—about 3–5 minutes.
  • Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract and lemon zest.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Cooking

  • Using a cookie scoop or tablespoon, drop rounded amounts of dough onto the prepared baking sheet, leaving space for spreading.
  • Bake for 10–12 minutes, or until the edges turn lightly golden.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Assembly

  • Once the cookies have cooled, flip half of them over, and generously pipe or spread strawberry frosting on the flat side.
