Preparation

  • Gather all ingredients: butter, sugar, lemon zest, lemon juice, and egg yolks.
  • Prepare a double boiler: Fill a saucepan with a few inches of water and place it on medium heat.
  • Whisk egg yolks and sugar together in a heatproof bowl until creamy and combined.
  • Zest the lemons and extract juice, making sure to catch any seeds.

Cooking/Assembly

  • Place the bowl over the simmering water, ensuring the bowl doesn’t touch the water.
  • Add lemon juice and zest, then stir continuously for about 10 minutes.
  • Cook until the mixture thickens enough to coat the back of a spoon (160°F or 71°C).
  • Remove from heat and whisk in the butter until melted and combined.

Serving

  • Allow the Lemon Curd to cool slightly before transferring into jars.
  • Once cooled, refrigerate for at least an hour for best texture.
  • Serve chilled or at room temperature as a spread or filling.

Notes

For best results, use fresh lemons for the brightest flavor. Strain the mixture before pouring into jars for a smoother texture. Store in airtight containers to maintain freshness. Can be made ahead and stored for up to two weeks.
