Preparation

  • Gather your ingredients.
  • Cut the chicken into bite-sized pieces.
  • Chop your veggies into uniform pieces for even cooking.
  • Mince the garlic and zest the lemon.

Cooking/Assembling

  • Heat olive oil in a large skillet over medium heat.
  • Add chicken, season with salt and pepper, and cook until golden brown.
  • Stir in garlic and cook for about a minute until fragrant.
  • Toss in mixed veggies and orzo, cooking until veggies are tender.
  • Pour in lemon juice and zest, stirring everything to combine.

Serving

Notes

For the best texture, consider cooking veggies separately before adding them to the chicken. This dish can be made gluten-free by substituting orzo with gluten-free pasta.
