Instructions
 

Preparation

  • Gather all ingredients and ensure cottage cheese is well-drained.
  • Preheat your oven to 350°F (175°C).
  • Line a baking tray with parchment paper.
  • In a mixing bowl, combine cottage cheese, oat flour, honey or maple syrup, lemon juice, lemon zest, and salt.
  • If using, add protein powder to the mixture.

Cooking

  • Gently fold in fresh blueberries into the prepared mixture.
  • Scoop out the mixture and shape it into bite-sized balls.
  • Place the balls on the lined baking tray, leaving space between each bite.
  • Bake in the preheated oven for about 15–20 minutes or until lightly golden and set.

Serving

  • Once baked, allow the bites to cool slightly on the tray.
  • Transfer to a cooling rack for further cooling.
  • Serve warm or at room temperature.
  • Store leftovers in an airtight container.

Notes

For extra protein, use a flavored protein powder. Don't overmix after adding blueberries to keep them intact. Store in the refrigerator for up to one week, or freeze for up to three months.
